Weekly Recipe: Crash Hot Potatoes

I think I might have missed the weekly recipe last week!  Gasp!  How did you all survive?  Well since I'm sure you're all waiting with baited breath, I've got a good and very easy one for you.  The Pioneer Woman is a legend in the blog world and even though I have no idea how she got to be as famous as she is, every recipe of hers that I've tried has been great.  Maybe that's why.  Or maybe it's because she lives on a ranch the size of my city.  Or maybe because she has an awesome home, photography skills, writing style, home schools her children, has so much money she's able to have self-funded, awesome giveaways.  Whatever, you get the point. 

This is an easy side dish that worked well with a copycat version of Texas Roadhouse's Legendary Beef Tips.  They were good too but the picture did not look appetizing so I opted not to post it.  Back to the taters.  I love the way the oven gives them those crunchy edges.  Don't be stingy with your olive oil when you grease the pan.  This actually helps them to cook and is imperative if you want to get them off in one piece!  I've posted the recipe below for your convenience. 

Pioneer Woman's Crash Hot Potatoes

Ingredients

  • 12 whole New Potatoes (or Other Small Round Potatoes)
  • 3 Tablespoons Olive Oil
  • Kosher Salt To Taste
  • Black Pepper To Taste
  • Rosemary (or Other Herbs Of Choice) To Taste

Preparation Instructions

Bring a pot of salted water to a boil. Add in as many potatoes as you wish to make and cook them until they are fork-tender.
On a sheet pan, generously drizzle olive oil. Place tender potatoes on the cookie sheet leaving plenty of room between each potato.
With a potato masher, gently press down each potato until it slightly mashes, rotate the potato masher 90 degrees and mash again. Brush the tops of each crushed potato generously with more olive oil.
Sprinkle potatoes with kosher salt, fresh ground black pepper and fresh chopped rosemary (or chives or thyme or whatever herb you have available.)
Bake in a 450 degree oven for 20-25 minutes until golden brown.

  1. These sound (and look!) fantastic. Believe it or not, I've never tried any PW recipes, though I keep telling myself that one day when I have time to cook again, I'm going to try at least one of them!
